Ingredients

For the Beef and Vegetable Filling:

  • 1 pkg ground beef (ButcherBox recommended)
  • 1 cup butternut squash, small dice
  • 1 cup carrots, small dice
  • 1 cup peas (if frozen, do not thaw)
  • 1 can (15.5 oz) garbanzo beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium yellow onion, small dice
  • 4 cloves garlic, minced
  • ½ tsp cinnamon
  • 1 tsp muchi curry powder
  • 1 tsp garam masala
  • 1 Tbsp tomato paste
  • 2 tsp kosher salt
  • ⅓ cup beef stock

For the Topping:

  • 1 head cauliflower
  • 2 sweet potatoes
  • ½ tsp muchi curry powder
  • ½ tsp coarse ground black pepper
  • 1 tsp kosher salt
  • 1 tsp ghee

Instructions

Step 1: Prepare the Topping

  1. Preheat oven to 350°F (175°C).
  2. Rinse sweet potatoes, poke twice with a fork, and roast on a baking sheet for 1 hour or until tender. Peel when cool enough to handle.
  3. Cut cauliflower into florets and steam for 10 minutes until fork-tender.
  4. Mash or puree the roasted sweet potatoes and steamed cauliflower with the spices and ghee until smooth. Set aside.

Step 2: Cook the Beef and Vegetable Filling

  1. Heat a sauté pan over medium-high heat. Crumble ground beef and cook for 1 minute.
  2. Add garlic, onion, butternut squash, carrots, and spices. Sauté until onions are translucent.
  3. Stir in diced tomatoes, tomato paste, and beef stock. Cook for 3 minutes.
  4. Remove from heat and fold in garbanzo beans and peas.

Step 3: Assemble and Bake

  1. Pour the beef and vegetable mixture into a 9″ x 13″ casserole dish. For meal prep, divide into smaller oven-safe containers.
  2. Spread the mashed cauliflower and sweet potato mixture evenly over the top.
  3. Bake for 30 minutes, then remove from the oven and serve warm.

Tips & Variations:

  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Add extra vegetables like zucchini, bell peppers, or spinach for more color and nutrients.
  • Leftovers store well in the fridge for up to 4 days—perfect for meal prep.

This Spiced-Up Cottage Pie is a comforting, hearty, and flavorful meal that brings a little extra spice to your classic shepherd’s pie. Perfect for cozy dinners or preparing ahead for the week!
