Ingredients

- 1 can (15.5 oz) garbanzo beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1 medium yellow onion, small dice
- 4 cloves garlic, minced
- ½ tsp cinnamon
- 1 tsp muchi curry powder
- 1 tsp garam masala
- 1 Tbsp tomato paste
- 2 tsp kosher salt
- ⅓ cup beef stock
For the Topping:
- 1 head cauliflower
- 2 sweet potatoes
- ½ tsp muchi curry powder
- ½ tsp coarse ground black pepper
- 1 tsp kosher salt
- 1 tsp ghee
Instructions
Step 1: Prepare the Topping
- Preheat oven to 350°F (175°C).
- Rinse sweet potatoes, poke twice with a fork, and roast on a baking sheet for 1 hour or until tender. Peel when cool enough to handle.
- Cut cauliflower into florets and steam for 10 minutes until fork-tender.
- Mash or puree the roasted sweet potatoes and steamed cauliflower with the spices and ghee until smooth. Set aside.
Step 2: Cook the Beef and Vegetable Filling
- Heat a sauté pan over medium-high heat. Crumble ground beef and cook for 1 minute.
- Add garlic, onion, butternut squash, carrots, and spices. Sauté until onions are translucent.
- Stir in diced tomatoes, tomato paste, and beef stock. Cook for 3 minutes.
- Remove from heat and fold in garbanzo beans and peas.
Step 3: Assemble and Bake
