Slow Cooker Creamy Tomato Basil Chicken Breast

Ingredients

  • 14 oz can diced tomatoes with Italian herbs
  • 1 cup tomato pasta sauce
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ¼ teaspoon black pepper
  • ½ cup evaporated milk or heavy cream
  • 2 tablespoons corn starch
  • 4 boneless skinless chicken breasts
  • 2 tablespoons finely chopped fresh basil

Instructions

  1. In a 3-6 quart slow cooker, combine the diced tomatoes, pasta sauce, garlic, salt, Italian seasoning, dried basil, and black pepper. Stir well.
  2. In a small bowl, whisk together the cream and corn starch, then add it to the slow cooker.
  3. Place the chicken breasts in the sauce, pressing them down to ensure they’re coated.
  4. Cover and cook on low for 3-5 hours, or until the chicken reaches an internal temperature of 165°F. Cooking time may vary depending on your slow cooker.
  5. Stir in the fresh basil before serving. Enjoy over pasta, rice, or with a side of salad and veggies!
