Easy Slow-Cooker Lemon Chicken

Ingredients:

  • 1 red onion, sliced
  • 6-8 bone-in, skin-on chicken thighs
  • 1-1.5 lbs baby potatoes, halved
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1/2 tablespoon fresh thyme leaves
  • Sea salt and pepper to taste
  • A bunch of thin green asparagus

Instructions:

  1. Layer the sliced red onion at the bottom of the slow cooker.
  2. Place the chicken thighs on top, followed by the halved baby potatoes.
  3. In a small bowl, combine the lemon zest, lemon juice, olive oil, honey, thyme, sea salt, pepper, and minced garlic. Pour this mixture over the chicken and vegetables.
  4. Secure the lid and cook on high for 3-4 hours or low for 6-8 hours, depending on your schedule.
  5. About 15-20 minutes before cooking is complete, switch to high and add the asparagus on top.
  6. For an extra touch, remove the chicken thighs 5 minutes before serving and broil them in the oven for 3-5 minutes until the skin is golden and crispy.
