Apple Pie Cupcakes

When you’re craving the flavors of apple pie but want something a bit different, these Apple Pie Cupcakes are the perfect alternative! Made with buttery pie crust, tender apple filling, and a crunchy crumble topping, they offer all the deliciousness of a classic pie in bite-sized form.

Ingredients

For the Pie Crust:

  • 2 pre-made pie crusts or homemade all-butter pie crust

Apple Filling:

  • 2 tablespoons unsalted butter
  • 2 large apples, peeled, cored, and diced into 1/4-inch cubes
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons lemon juice

Crumble Topping:

  • 2 tablespoons unsalted butter
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 1/3 cup toasted pecan halves
  • 1/8 teaspoon salt

Other Ingredients:

  • 1 egg for egg wash
  • Whipped cream, ice cream, or caramel sauce for topping

Instructions

  1. Preheat Oven: Heat oven to 350°F and lightly spray 24 mini muffin cups with cooking spray.
  2. Prepare Apple Filling: In a medium-sized pan, melt butter over medium-high heat. Add diced apples, brown sugar, cinnamon, and salt. Cook, stirring often, until apples are tender (about 10-12 minutes). Stir in lemon juice and set aside to cool.
  3. Make the Crumble Topping: In a medium bowl, combine flour, brown sugar, and toasted pecans. Add cold butter and mix until the mixture becomes crumbly.
  4. Prepare the Pie Crusts: Roll out the pie crusts on a floured surface. Using a round cookie or biscuit cutter (about 3 inches in diameter), cut out 24 rounds. Press each round into the mini muffin pan, shaping them into a cup form. Brush the top edges with an egg wash.
  5. Assemble the Cupcakes: Evenly distribute the apple filling into the prepared pie crusts. Top each with the crumble mixture.
  6. Bake: Bake for 15-20 minutes, or until the edges are golden brown. Remove from the oven and allow to cool on a wire rack. Once cooled, gently loosen the crusts from the muffin cups using a knife.
  7. Serve: Serve the apple pie cupcakes topped with whipped cream, a scoop of ice cream, or a drizzle of caramel sauce for an extra indulgent treat!
