Ingredients

  • 3 cups all-purpose flour
  • ½ teaspoon ground nutmeg
  • ½ cup packed light brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 ¾ cups white granulated sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (165°C). Grease two 8×4-inch loaf pans with butter or non-stick cooking spray and line them with parchment paper, allowing the paper to hang over the edges for easy removal. Set aside.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, and nutmeg until well combined.
  3. Combine Wet Ingredients: In a large bowl, use a handheld mixer or whisk to beat together the eggs, vegetable oil, vanilla extract, brown sugar, and granulated sugar until thoroughly mixed.
  4. Incorporate Flour Mixture: Gradually add the dry flour mixture into the wet ingredients, mixing well until combined.
  5. Add Zucchini and Walnuts: Fold in the grated zucchini and chopped walnuts until evenly distributed throughout the batter.
  6. Pour and Bake: Divide the batter evenly between the prepared loaf pans. Bake for 40-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Enjoy: Allow the loaves to cool in the pans on a cooling rack for about 20 minutes. Then, carefully remove them from the pans and let them cool completely before slicing.
