A flavorful, filling wrap packed with Caesar-dressed greens, grilled chicken, avocado, bacon, and basil pesto. Perfect for a quick lunch or satisfying dinner!

Ingredients
Caesar Dressing
- 1/2 cup mayo
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1-2 cloves garlic, grated
- Kosher salt and black pepper, to taste
- 1/3 cup grated Parmesan
Wraps
- 4 large tortillas (gluten-free if preferred)
- 4 cups shredded lettuce
- 1 avocado, diced
- 1/4 cup fresh basil, torn
- 1/2 cup basil pesto
- 1-1 1/2 cups grilled chicken, cubed or shredded
- 6 slices cooked bacon, crumbled
- 1/2 cup crumbled blue cheese or shredded cheddar
Instructions
- Prepare the Dressing: In a bowl or jar, combine all dressing ingredients. Season with salt and pepper to taste.
- Assemble the Wraps: In a large salad bowl, toss together the lettuce, avocado, and basil. Mix in half of the dressing to coat.
- Build the Wraps: Warm each tortilla in the microwave for 20 seconds. Spread a layer of pesto on each, then add the salad, chicken, bacon, and cheese. Drizzle additional dressing over the fillings. Fold the sides and ends of each tortilla, then roll tightly to form the wraps.
- Serve: Enjoy the wraps at room temperature, or warm in a skillet with a bit of olive oil until golden and crispy. Serve with extra dressing and pesto if desired.
Notes
Grilled Black Pepper Chicken: For extra flavor, toss 1 pound of chicken tenders in 2 tablespoons olive oil, 1-2 tablespoons Cajun or fajita seasoning, and a pinch of black pepper. Grill for 10-12 minutes, turning halfway through, until charred and cooked through.
