These Baked Apple Pie Enchiladas deliver all the warm cinnamon-spiced flavor of apple pie, wrapped snugly in tortillas and topped with a rich caramel sauce!
Ingredients
- 1 (21 oz) can apple pie filling or homemade apple pie filling
- 6 (8-inch) flour tortillas
- 1 tsp ground cinnamon
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup water
Instructions
- Preheat oven to 350°F and lightly butter a 9 x 13-inch baking dish.
- If needed, soften tortillas in the microwave to make rolling easier.
- Spoon about 1/4 cup of apple pie filling slightly off-center in each tortilla. Sprinkle with cinnamon.
- Roll each tortilla and place seam-side down in the baking dish.
- In a saucepan, bring butter, white sugar, brown sugar, and water to a boil. Reduce heat and simmer for 3 minutes, stirring constantly.
- Pour the caramel sauce over the enchiladas, sprinkle with extra cinnamon if desired, and let stand for 45 minutes.
- Bake in the preheated oven for 20 minutes or until golden brown.
- Serve warm with vanilla ice cream or whipped cream and drizzle with additional caramel sauce as desired.
