Classic peanut butter cookies get a chic upgrade with a touch of chocolate. These are easy to make, fun to decorate, and absolutely irresistible!

Ingredients

  • Cookies:

  • 1 cup peanut butter

  • 1/2 cup unsalted butter, softened

  • 1/2 cup shortening

  • 1 cup granulated sugar

  • 1 cup packed brown sugar

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all-purpose flour

  • Additional granulated sugar for rolling

  • Chocolate Coating:

  • 3 cups chocolate chips (milk chocolate, semi-sweet, or a mix)

  • 1 tablespoon shortening

  • Sprinkles, crushed peanuts, or both

Directions

  • Prepare the Dough:
  • In a stand mixer fitted with a paddle attachment, cream together the peanut butter, butter, and shortening for about 1 minute.
  • Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping down the sides of the bowl as needed.
  • Mix in the eggs and vanilla, then gradually add the flour until just combined.
  • Cover the dough and chill for 1 hour.
  • Bake the Cookies:
  • Preheat the oven to 375°F (190°C).
  • Roll the dough into 1 1/4-inch balls, then coat them in granulated sugar.
  • Place the dough balls 2 inches apart on an ungreased cookie sheet. Flatten each one with a fork to create a crisscross pattern.
  • Bake for 7–9 minutes, or until the cookies are lightly browned.
  • Let the cookies cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
  • Decorate with Chocolate:
  • Melt the chocolate chips and shortening in a double boiler until smooth.
  • Line your countertop with wax paper and prepare bowls with sprinkles and/or crushed peanuts.
  • Dip half of each cookie into the melted chocolate, then coat the dipped edge with sprinkles, peanuts, or both.
  • Place the cookies on wax paper and allow the chocolate to set completely.
