- 4-5 lb pork shoulder roast or Boston butt roast*
- 2 tablespoons neutral oil
- 2 cups fresh apple cider* (not vinegar)
- 2 cups chicken stock or broth
- 2 tablespoons Dijon mustard
- 1 tablespoon dehydrated minced onion
- 1 head of garlic, top sliced off
- 3 sprigs of rosemary
- 4 sprigs of thyme
- 1 red onion, thickly sliced
- 2 firm, slightly tart apples*, peeled and cut into wedges
- Kosher salt
- Freshly cracked black pepper
Instructions:
- Preheat Oven: Set your oven to 325°F (163°C).
- Prepare the Pork: Trim any excess fat from the pork shoulder and cut it into 4 large pieces (or leave it whole if bone-in). Pat the pork dry with paper towels and season generously with kosher salt and pepper.
- Sear the Pork: Heat the oil in a large Dutch oven over medium-high heat. Once hot, add the pork in a single layer and sear for 4-5 minutes on each side until deeply browned. You may need to do this in batches.
- Make the Braising Liquid: While the pork is searing, whisk together the apple cider, chicken stock, Dijon mustard, and dehydrated minced onion. Bundle the rosemary and thyme together with kitchen twine.
