Ingredients

Cake:
• 3 cups granulated sugar
• 1 ½ cups unsalted butter, softened
• 5 large eggs
• 3 cups all-purpose flour, sifted
• 2 tablespoons pure lemon extract
• 1 cup lemon-lime soda (like 7Up®)

Glaze:
• 1 cup confectioners’ sugar, sifted
• ¼ cup whole milk
• ½ teaspoon pure vanilla extract

Instructions

  1. Prep the Pan and Oven:
    Preheat your oven to 325°F (165°C). Generously butter a 10-inch fluted tube pan (such as a Bundt pan) to ensure easy removal.
  2. Make the Cake Batter:
    In a large bowl, beat together the sugar and softened butter with an electric mixer until light and fluffy. Add the eggs one at a time, making sure each is fully incorporated. Gradually add the sifted flour, one cup at a time, mixing until smooth. Stir in the lemon extract and then gently fold in the lemon-lime soda.
  3. Bake the Cake:
    Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for about 75 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and invert the cake onto a wire rack to cool.
  4. Prepare the Glaze:
    While the cake cools, whisk together the confectioners’ sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm cake, ensuring even coverage.
  5. Cool and Serve:
    Allow the cake to cool completely and let the glaze set before serving.
