White Velvet Cake

Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk, at room temperature
  • 2 teaspoons vanilla extract

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract

Directions

Preparing the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar using an electric mixer until the mixture is light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition.
  5. Gradually add the flour mixture and buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined, being careful not to overmix.
  6. Stir in the vanilla extract until just incorporated.
  7. Divide the batter evenly between the prepared cake pans, smoothing the tops with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Preparing the Frosting:

  1. In a large mixing bowl, beat the softened butter until creamy using an electric mixer.
  2. Gradually add the powdered sugar, beating until smooth and well combined.
  3. Mix in the heavy cream and vanilla extract, beating until the frosting is light and fluffy, about 3-4 minutes.

Assembling the Cake:

  1. Place one cake layer on a serving plate and spread a layer of frosting on top.
  2. Add the second cake layer and frost the top and sides of the cake.
  3. Decorate as desired with additional frosting, sprinkles, or other toppings.
  4. Chill the cake for at least 30 minutes before serving to allow the frosting to set.
