For the Casserole

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 1 packet taco seasoning (or homemade blend)
  • 1 can (10 oz / 280 g) diced tomatoes with green chilies
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) corn (fresh, frozen, or canned)
  • 1 cup (240 ml) salsa
  • 2 cups (200 g) shredded cheese (cheddar or Mexican blend)
  • 3 cups tortilla chips, roughly crushed
  • ½ cup (120 ml) sour cream

Optional Toppings

  • Diced fresh tomatoes
  • Sliced jalapeños
  • Chopped cilantro
  • Avocado or guacamole
  • Extra sour cream

👩‍🍳 Instructions

1. Prepare the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. Cook the Beef Mixture

In a large skillet over medium heat, cook the ground beef with the diced onion until fully browned and fragrant. Drain any excess grease.
Add the taco seasoning, diced tomatoes, black beans, corn, and salsa. Stir well and let it simmer for about 5 minutes to develop flavor.

3. Assemble the Layers

Spread half of the crushed tortilla chips evenly across the bottom of the baking dish.
Add half of the beef mixture on top, then sprinkle with 1 cup of shredded cheese.
Repeat the layers with the remaining chips, beef mixture, and cheese.

4. Bake

Cover the dish with foil and bake for 20 minutes.
Remove the foil and continue baking for another 10 minutes, until the cheese is melted, bubbly, and slightly golden.

5. Serve

Allow the casserole to cool for a few minutes before serving. Add sour cream and your favorite toppings for extra flavor and freshness.
