🥄 Ingredients

For the Pork

  • 1.5 lb (700 g) pork tenderloin
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter

For the Dijon Cream Sauce

  • 1 tbsp butter
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • ½ cup (120 ml) chicken broth
  • ½ cup (120 ml) heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

👩‍🍳 Instructions

1. Prep & Season

Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry and season it evenly with salt, pepper, and garlic powder.

2. Sear the Pork

Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
Sear the pork on all sides until beautifully golden, about 2–3 minutes per side. This step locks in the juices and builds flavor.

3. Roast to Perfection

Transfer the skillet to the oven and roast for 15–20 minutes, or until the internal temperature reaches 145°F (63°C).
Remove from the oven, loosely cover with foil, and let the meat rest for 5–10 minutes.

4. Prepare the Creamy Sauce

Using the same skillet, melt butter over medium heat. Add the chopped shallot and cook until soft, about 2–3 minutes.
Stir in the garlic and cook for 30 seconds until fragrant.

Pour in the chicken broth, scraping up all the flavorful browned bits from the pan. Let it simmer for a couple of minutes.

Add the heavy cream, Dijon mustard, and thyme. Stir well and let the sauce gently simmer for 3–4 minutes until slightly thickened. Season to taste.

5. Serve

Slice the rested pork into medallions and generously spoon the creamy Dijon sauce over the top. Serve immediately with your favorite sides.

🍽 Tips for Success

✔️ Always sear the pork first for a rich, golden crust and deeper flavor.
✔️ Let the meat rest before slicing to keep it juicy and tender.
✔️ Use the same pan for the sauce—those browned bits add incredible depth.
✔️ Choose a good-quality Dijon mustard for the best flavor.

🔄 Variations

✨ Mushroom Twist: Add sliced mushrooms when cooking the shallots for an earthy, rich version.
🌿 Herb Upgrade: Include fresh rosemary or sage during roasting for extra aroma.
🌶️ Spicy Kick: Mix Dijon with whole-grain mustard for added texture and heat.

❓ FAQs

Can I prepare this in advance?
Yes! You can sear the pork and make the sauce ahead of time. Reheat gently before serving.

Can I use pork chops instead?
Absolutely. Just adjust cooking time depending on thickness to avoid overcooking.

What sides go well with this dish?
Mashed potatoes, roasted vegetables, rice, or a fresh green salad all pair beautifully.

🍷 Serving Ideas

  • Drizzle extra sauce over mashed or roasted potatoes for extra indulgence
