Psyllium husk powder is the key to success in this recipe. It forms a gel when mixed with water, helping bind the dough and create a texture similar to traditional bread. It also supports digestion and adds fiber—making this bread both delicious and healthy!


🛒 Ingredients (1 Loaf)

Dry Ingredients:

  • ¾ heaped cup (100 g) buckwheat flour
  • ⅔ cup (100 g) white rice flour
  • 1 cup (100 g) chickpea flour
  • 5 tbsp (40 g) tapioca starch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾–1 tsp sea salt
  • ⅜ cup (50 g) pumpkin seeds (optional)

Psyllium Mixture:

  • 1.8 cups (450 ml) water
  • 3 tbsp (30 g) psyllium husk powder

👩‍🍳 Instructions

1. Make the Psyllium Gel

In a bowl, whisk together water and psyllium husk powder. It will thicken almost instantly into a gel. Set aside for 20–30 minutes.

2. Mix Dry Ingredients

In a large bowl, combine all dry ingredients. Preheat oven to 390°F (200°C).

3. Form the Dough

Add the psyllium gel to the dry ingredients. Knead using a mixer with dough hooks or your hands for 5–10 minutes until a dough forms.

👉 If too dry: add a splash of water

4. Shape & Bake

Shape into a round or rectangular loaf and place on a lined baking sheet.
Bake for 50–60 minutes until golden and firm.

5. Cool & Slice

Let the bread cool completely before slicing to get the best texture.
