I’ve loved onions for as long as I can remember. Somewhere in childhood—well before any major milestones—my mom went through a phase of baking whole onions, and that was it for me. From that point on, onions in all forms felt essential. Fried until crispy, slowly caramelized, sliced raw into salads, tucked into sandwiches as pickled rings—I’m convinced most savory dishes are better when onions are involved.

So when I learned there was a casserole made almost entirely of onions, I paid attention. When I saw someone spoon that cheesy onion goodness onto a burger? I was completely sold.

Despite the name, Tennessee Onions don’t have a clearly documented origin. They’re often associated with Southern and Appalachian cooking, though the sweet Vidalia onions traditionally used in the dish actually come from Georgia. But wherever they originated, this casserole has earned its place at the table.

Picture layers of tender, sweet onions seasoned with warm spices, baked until soft and lightly caramelized, then smothered in melted cheddar, smoky Gouda, and a finishing sprinkle of Parmesan. It’s rich, cozy, and surprisingly versatile—perfect as a side dish, a topping for burgers or steaks, or even the star of the meal with some crusty bread on the side.

Sweet onions are the heart of this recipe. Vidalia onions are ideal thanks to their natural sweetness and mild flavor, but any sweet onion will work beautifully. A blend of mustard powder, garlic powder, smoked paprika, and a touch of cayenne gives the onions a savory backbone without overpowering their sweetness.

The cheese combination is what makes this casserole special. Cheddar melts smoothly, smoked Gouda adds richness, and Parmesan finishes things off with a salty, umami note. Diced butter scattered on top ensures everything bakes up tender and indulgent.

How Tennessee Onions Come Together

Start by separating sliced onions into rings and tossing them with spices and salt until evenly coated. Half of the onions are layered into a greased baking dish, followed by a generous sprinkle of cheese. The remaining onions and cheese go on top, finished with Parmesan and butter.

Covered and baked, the onions soften and release their natural sweetness. Once uncovered, the cheese melts and browns slightly, creating a bubbling, golden casserole that smells as good as it tastes. A sprinkle of fresh parsley at the end adds color and freshness, though it’s completely optional.

Tennessee Onions are best enjoyed straight from the oven while the cheese is melty and the onions are perfectly tender. It’s a humble dish with big flavor—and proof that sometimes, onions really can steal the show.
