Tender Chicken Breasts in Creamy Dijon Mustard Sauce Over Fluffy Mashed Potatoes

This easy, one-skillet chicken dinner features tender, juicy chicken breasts smothered in an insanely delicious creamy dijon mustard sauce. Served over perfectly fluffy mashed potatoes, this comforting meal is ideal for date nights or casual weeknights — everyone will love it!

Why You’ll Love This Recipe

  • One skillet for chicken and sauce: Minimal cleanup and maximum flavor.
  • Rich and creamy dijon sauce: Made with garlic, white wine, chicken broth, and heavy cream for that perfect tangy and velvety texture.
  • Fluffy mashed potatoes: Made with butter and heavy cream for the ultimate comfort side.
  • Customizable mustard flavor: Adjust the amount of dijon mustard to suit your taste, perfect even if you’re not a big mustard fan.

Ingredients

For the Mashed Potatoes:

  • 2 pounds russet potatoes, peeled and quartered
  • 2 tablespoons butter
  • ½ cup heavy whipping cream
  • 1 teaspoon salt

For the Chicken:

  • 4 chicken breasts
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

For the Dijon Cream Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • ½ cup chicken broth
  • ½ cup dry white wine (or more chicken broth)
  • 2-3 tablespoons dijon mustard (adjust to taste)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup heavy whipping cream
  • Optional garnish: chopped parsley

How to Make It

Step 1: Cook the Mashed Potatoes

Place peeled and quartered potatoes in a large pot. Cover with water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and return to pot. Add butter, heavy cream, and salt, then mash until smooth and creamy. Keep warm.

Step 2: Prepare the Chicken

Season chicken breasts with garlic powder, salt, and pepper. Heat butter and olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for about 5 minutes per side, until golden brown. Remove chicken and set aside.

Step 3: Make the Dijon Cream Sauce

Reduce heat to medium. In the same skillet, melt butter and sauté garlic until fragrant. Whisk in flour and cook for 1 minute. Gradually add chicken broth and white wine while whisking. Stir in dijon mustard, salt, and pepper. Pour in heavy cream and simmer 1-2 minutes until slightly thickened.

Step 4: Combine and Bake

Return the chicken to the skillet, spoon sauce over top, and transfer the skillet to a preheated oven at 375°F (190°C). Bake for 15-18 minutes, or until chicken is cooked through.

Step 5: Serve

Plate the chicken and spoon extra dijon cream sauce over fluffy mashed potatoes. Garnish with chopped parsley if desired. Enjoy!

Tips & Substitutions

  • Mustard: Dijon mustard adds the perfect creamy tang, but if you prefer a milder taste, start with 1 tablespoon and adjust. Avoid substituting yellow mustard as the flavor and color differ significantly.
  • Wine: Use a dry white wine, such as Sauvignon Blanc or Pinot Grigio. If you prefer to skip alcohol, replace the wine with extra chicken broth.
  • Oven-Safe Skillet: If your skillet isn’t oven-safe, transfer chicken and sauce to a baking dish before baking.
  • Mashed Potatoes: For extra creamy potatoes, use an electric mixer, or mash by hand if you prefer a chunkier texture.
