Sweetened Condensed Milk Frosting (Russian Buttercream)

Also known as Russian buttercream, this sweetened condensed milk frosting is incredibly simple and requires just two ingredients! Ready in just 15 minutes, it’s a smooth and creamy addition to your cakes and cupcakes.

Ingredients:

  • 1 cup unsalted butter, room temperature (see notes if using salted butter)
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract (optional)
  • ¼ tsp salt (optional)

Instructions:

  1. Using the whip attachment on a standing mixer or a handheld mixer, whip the softened butter on high for about 10 minutes, until it becomes very pale, light, and fluffy. The butter should almost triple in size. Be sure to scrape down the sides of the bowl with a rubber spatula to ensure even mixing.
  2. Once the butter is whipped, slowly add the sweetened condensed milk in 3-4 additions, mixing between each one. Scrape down the bowl as needed. Taste and adjust the consistency – you may not need to use the whole can if you’re happy with the flavor and texture.
  3. If the buttercream looks separated or curdled, refrigerate it for 15-20 minutes, then re-whip to restore a smooth consistency.
  4. Mix in the optional vanilla and salt, and your frosting is ready to use on cakes and cupcakes!
