Ingredients

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 4 fresh peaches, sliced (or one 15-ounce can sliced peaches, drained)

For the Crumb Topping:

  • 1 cup light brown sugar
  • 1 cup all-purpose flour
  • 2 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 cup melted butter

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 350°F (175°C) and grease and flour a 9-inch round baking pan.
  2. Mix Dry Ingredients: Sift together 1 1/2 cups flour, baking soda, baking powder, and salt in a medium bowl.
  3. Cream Butter & Sugar: In a large bowl, beat softened butter and 1/2 cup sugar until fluffy.
  4. Add Wet Ingredients: Add vanilla and eggs, one at a time, mixing well.
  5. Combine with Dry Ingredients: Gently fold in flour mixture and sour cream until just combined. Spread the batter in the prepared pan.
  6. Add Peaches: Layer the peach slices on top of the batter.
  7. Make Crumb Topping: In a separate bowl, combine brown sugar, flour, cinnamon, and salt. Add melted butter and mix until crumbs form.
  8. Add Topping & Bake: Sprinkle the crumb topping over the peaches. Bake for 45-55 minutes, or until a toothpick comes out clean and the top is golden.
  9. Cool & Serve: Cool on a wire rack before slicing. Serve plain or with whipped cream or vanilla ice cream.
