Shrimp & Rice Bowl with Pineapple Salsa

Ingredients

For the Shrimp:

  • ½ lb large shrimp
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp Old Bay seasoning
  • Salt & pepper, to taste
  • Olive oil

For the Rice:

  • 1 cup jasmine rice

For the Pineapple Salsa:

  • ⅓ pineapple, diced
  • ¼ red onion, diced
  • 1 Roma tomato, diced
  • ¼ cup cilantro, chopped
  • Juice of 1 lime
  • Salt & pepper, to taste
  • Red pepper flakes (optional, for heat)

For the Avocado Crema (Optional but SO good!):

  • ½ avocado
  • 2 tbsp Greek yogurt
  • ¼ cup cilantro
  • 2 green onion stems
  • Juice of 1 lime
  • 2 tbsp olive oil
  • ⅓ cup water (adjust for desired consistency)
  • Salt & pepper, to taste

How to Make It

1. Cook the Shrimp

  • In a bowl, drizzle shrimp with olive oil and season with garlic powder, onion powder, Old Bay, salt, and pepper. Toss to coat.
  • Preheat the air fryer to 380°F and cook the shrimp for 6 minutes, flipping halfway through.

2. Make the Pineapple Salsa

  • In a bowl, mix the pineapple, red onion, tomato, and cilantro.
  • Season with lime juice, salt, pepper, and red pepper flakes (if you like a little heat). Stir well and adjust seasoning as needed.

3. Cook the Rice

  • Cook jasmine rice according to package instructions. Fluff with a fork when done.

4. Prepare the Avocado Crema (Optional but highly recommended!)

  • Add avocado, Greek yogurt, cilantro, green onions, lime juice, olive oil, water, salt, and pepper to a blender.
  • Blend until smooth. Add more water for a thinner consistency.

5. Assemble the Bowls

  • Start with a base of jasmine rice, add air-fried shrimp, then spoon over the pineapple salsa.
  • Slice fresh avocado on top and drizzle with avocado crema for extra creaminess.
  • Serve immediately and enjoy!
