Ravioli with Asparagus, Cherry Tomatoes & Fresh Herbs

  • 1 tablespoon olive oil
  • 450 g asparagus, trimmed and cut into 5 cm pieces
  • 300 g cherry tomatoes, halved
  • 3 cloves garlic, minced

  • 1 tablespoon fresh lemon juice
  • 15 g fresh basil, chopped
  • 15 g fresh parsley, chopped
  • 25 g grated Parmesan cheese, plus extra for serving
  • 570 g refrigerated cheese ravioli

Instructions

  1. Cook the Ravioli
    Bring a large pot of salted water to a boil. Cook the ravioli according to package instructions. Drain and set aside.
  2. Sauté the Asparagus
    Heat olive oil in a large skillet over medium-high heat. Add the asparagus and cook for 4–5 minutes, stirring occasionally, until tender-crisp.
  3. Add Tomatoes and Garlic
    Stir in the cherry tomatoes and minced garlic. Season with salt and pepper. Cook for 2–3 minutes until the tomatoes begin to soften.
  4. Create the Sauce
    Pour in the chicken broth and lemon juice. Bring to a gentle simmer and cook for about 2 minutes to combine the flavors.
  5. Combine with Ravioli
    Add the cooked ravioli to the skillet and gently toss with the vegetables and sauce until evenly coated.
  6. Finish with Herbs and Cheese
    Stir in the chopped basil, parsley, and Parmesan cheese. Cook for 1–2 minutes until everything is warmed through.
  7. Serve
    Plate the ravioli and vegetables, and top with extra Parmesan cheese if desired. Serve warm.
