Bagel Breakfast Sliders

These delicious bagel breakfast sliders combine fluffy scrambled eggs, crispy bacon, melted cheddar cheese, and creamy cream cheese layered inside mini bagels. Finished with a savory everything-style topping and baked until golden, they’re perfect for brunch, weekend breakfasts, or feeding a hungry crowd.

Ingredients

Egg Mixture

  • 8 eggs
  • 1/4 cup milk
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh chives

Bacon

  • 8 slices bacon

Bagels and Toppings

  • 10 mini bagels, halved
  • 4 tablespoons cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 3 tablespoons butter, melted
  • 2 teaspoons dried onion
  • 2 teaspoons granulated garlic
  • 2 teaspoons sesame seeds
  • 2 teaspoons poppy seeds

Instructions

  1. Preheat the Oven
    Preheat oven to 350°F (175°C) and lightly grease a large baking dish with cooking spray.
  2. Prepare the Eggs
    In a bowl, whisk together the eggs and milk until smooth. Set aside.
  3. Cook the Bacon
    In a skillet over medium heat, cook bacon until crispy. Transfer to paper towels to drain. Leave about 1 tablespoon of bacon fat in the pan.
  4. Scramble the Eggs
    Pour the egg mixture into the skillet and cook over medium-low heat, stirring gently until soft scrambled. Season with salt and pepper, then stir in chopped chives.
  5. Prepare the Bagel Base
    Spread cream cheese on the bottom halves of the mini bagels and arrange them in the prepared baking dish.
  6. Add the Fillings
    Spoon scrambled eggs evenly over the bagel bottoms. Add bacon pieces and sprinkle shredded cheddar cheese on top.
  7. Add the Bagel Tops
    Place the top halves of the bagels over the filling.
  8. Add the Seasoned Butter Topping
    Brush the bagel tops with melted butter and sprinkle with dried onion, garlic, sesame seeds, and poppy seeds.
  9. Bake
    Bake for 15 minutes, or until the cheese melts and the bagels turn golden.
  10. Serve
    Remove from oven, let cool slightly, then serve warm.
