8 ounces dry pasta
1 large ripe avocado
1 medium tomato, diced
1 green onion, thinly sliced
1/4 teaspoon garlic, finely grated
Juice of 1/4 lemon
Salt and freshly ground black pepper, to taste

- Cook the Pasta:
- Bring a pot of salted water to a boil and cook the pasta according to the package directions. Before draining, reserve 1/2 cup of the hot pasta water.
- Prepare the Sauce:
- While the pasta is cooking, mash the avocado in a large bowl until smooth. Stir in the grated garlic, lemon juice, salt, and pepper.
- Combine with Pasta Water:
