  • Pasta: Spaghetti works beautifully, but feel free to use your favorite pasta. We’ve even made it with chickpea or lentil pasta for added protein.
  • Avocado: Just one large, ripe avocado is all you need. Look for one that gives slightly when pressed.
  • Tomato: A handful of chopped tomatoes adds texture, flavor, and vibrant color to the dish.
  • Green onion and garlic: Mild green onions and a hint of garlic (just 1/4 teaspoon grated) provide flavor without overpowering the sauce.
  • Lemon juice: Brightens the sauce and loosens its texture. Lime juice works as a substitute, too.

How to Make Creamy Avocado Pasta

This recipe is incredibly quick to prepare:

  1. Cook the pasta: Boil your pasta in salted water, following the package instructions. While it cooks, prepare the sauce.
  2. Mash the avocado: Use a fork to mash the avocado in a bowl until creamy. Don’t worry if some small pieces remain; the pasta water will smooth it out later.
  3. Mix the sauce: Stir in grated garlic, lemon juice, salt, and pepper. Some skeptics may call it “guacamole pasta,” but trust us—you’ll love it!
  4. Add pasta water: Pour in a splash of hot pasta water, stirring until the sauce is smooth and coats the back of a spoon. The starchy water helps the sauce cling to the pasta perfectly.
  5. Combine: Toss the cooked pasta with the avocado sauce, green onions, and chopped tomatoes. Mix well, adding more pasta water as needed to reach your desired consistency.

Ingredients

  • 8 ounces dry pasta

  • 1 large ripe avocado

  • 1 medium tomato, diced

  • 1 green onion, thinly sliced

  • 1/4 teaspoon garlic, finely grated

  • Juice of 1/4 lemon

  • Salt and freshly ground black pepper, to taste

Directions

  • Cook the Pasta:
  • Bring a pot of salted water to a boil and cook the pasta according to the package directions. Before draining, reserve 1/2 cup of the hot pasta water.
  • Prepare the Sauce:
  • While the pasta is cooking, mash the avocado in a large bowl until smooth. Stir in the grated garlic, lemon juice, salt, and pepper.
  • Combine with Pasta Water:
  • Add 1/4 cup of the reserved hot pasta water to the avocado mixture and stir until the sauce is creamy and well combined.
  • Toss Everything Together:
  • Add the cooked pasta, diced tomatoes, and sliced green onions to the bowl. Toss thoroughly to coat the pasta evenly with the avocado sauce. If needed, add a bit more pasta water to adjust the sauce’s consistency.
