Ingredients

  • 398 mL canned crushed pineapple, well drained
  • 8 oz cream cheese, softened
  • 2 cups unsweetened desiccated coconut, divided
  • 1/2 cup graham cracker crumbs
  • 3 oz packet pineapple jello (dry mix)

Instructions

  1. In a large bowl, beat softened cream cheese until smooth.
  2. Add drained pineapple, 1 cup coconut, graham cracker crumbs, and dry pineapple jello mix. Combine thoroughly.
  3. Refrigerate mixture for 1 hour.
  4. Once chilled, portion into tablespoon-sized balls, rolling each one in the remaining coconut.
  5. Store finished balls in an airtight container in the fridge until ready to serve.
