Birria Enchiladas: A Flavor-Packed Mexican Fusion Dish

Ingredients You’ll Need

  • 4–5 dried guajillo chilies

  • 1 tsp ground cumin
  • 2 bay leaves

For the Enchiladas:

  • 12 corn tortillas
  • 1–2 cups shredded cheese (queso fresco or Oaxaca)

  • Fresh cilantro leaves (for garnish)
  • Lime wedges (for serving)

How to Make Birria Enchiladas

1. Prepare the Birria:

  • Toast guajillo and ancho chilies in a dry skillet until fragrant.
  • Remove stems and seeds, then soak chilies in hot water until softened.
  • Blend soaked chilies with garlic, oregano, cumin, and a splash of water to create a smooth marinade.
  • Place the meat in a slow cooker, pour the marinade over it, add bay leaves and water to cover, then slow-cook until tender and shreddable.

2. Assemble the Enchiladas:

  • Preheat oven to 350°F (175°C).
  • Warm tortillas slightly to make them pliable, then dip in birria broth for extra flavor.
  • Fill each tortilla with shredded birria and cheese, roll tightly, and place in a baking dish.
  • Ladle some birria broth over the enchiladas and top with additional cheese.

3. Bake to Perfection:

  • Bake for 15–20 minutes, or until cheese is melted and bubbly.

4. Garnish and Serve:

  • Sprinkle with chopped onion and fresh cilantro.
  • Serve with lime wedges and enjoy!
