Mushroom, Shallot & Herbed Goat Cheese Tarts

Ingredients (Makes 10 Tarts)

  • 10 puff pastry sheets (4-inch squares, thawed if frozen)
  • 8 oz mushrooms, sliced (any variety)
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/3 cup fresh parsley, roughly chopped
  • 2 tbsp olive oil
  • 1/4 cup Parmesan cheese
  • 4 oz goat cheese
  • 1/4 tsp each: sage, thyme, rosemary, salt, pepper
  • 1 egg, whisked (for egg wash)
  • 1/4 cup white wine (or chicken broth)

Instructions

  1. Prep Puff Pastry:
    Preheat oven to 400°F (200°C). Arrange puff pastry squares on two baking pans (max 6 per pan) and poke small holes in each with a fork.
  2. Cook Filling:
    Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add shallots and garlic, sauté 1–2 minutes. Add mushrooms, remaining olive oil, and spices; cook 2 more minutes. Stir in white wine and cook another 4–5 minutes.
  3. Add Cheese & Herbs:
    Turn off heat and mix in goat cheese, Parmesan, and parsley until creamy and well combined.
  4. Assemble Tarts:
    Spoon filling generously onto each puff pastry square. Optionally, pinch corners or sides for a decorative shape, or leave open to naturally puff.
  5. Egg Wash & Bake:
    Brush exposed puff pastry with egg wash (avoid the filling). Bake for 25–30 minutes until golden brown.
  6. Serve & Enjoy:
    Serve warm as an appetizer, snack, or alongside a main dish.

  • Puff Pastry: Use pre-cut squares for convenience. Thaw frozen pastry overnight or at room temperature for 2+ hours.
  • Pinching Designs: Pinch corners for a curved edge or pinch two sides for a boat-shaped tart. Both look gorgeous!
