One-Pot Teriyaki Noodles

This easy, one-pot vegetarian dish combines noodles, fresh veggies, and a flavorful homemade teriyaki sauce, all cooked together in a single pot! Perfect as a quick, meatless main course or a side to teriyaki chicken, this recipe is sure to be a family favorite.

Ingredients

  • ½ green cabbage, shredded
  • 2 carrots, shredded
  • 1 teaspoon olive oil
  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 16 oz spaghetti (1-pound box)
  • 3 ½ cups water
  • 1 tablespoon sesame seeds

Instructions

  1. Sauté Vegetables: Heat a large pot over medium-high heat. Once hot, add olive oil, cabbage, and carrots. Sauté for about 5 minutes, until vegetables begin to soften.
  2. Add Sauce and Pasta: Stir in soy sauce, brown sugar, ground mustard, ginger, and garlic powder. Then add the spaghetti (break in half if desired) and 3 ½ cups of water.
  3. Cook Noodles: Cook uncovered for 15-18 minutes, stirring every few minutes once the noodles start to soften. Stir more frequently towards the end to prevent sticking.
  4. Finish and Serve: Once noodles are tender, remove from heat, sprinkle with sesame seeds, and toss to combine. Garnish with additional sesame seeds and green onions, if desired. Serve hot and enjoy!
