Description

These Chocolate Chip Banana Oatmeal Cookies are a healthy, delightful treat you can enjoy anytime—perfect for dessert, a snack, or even breakfast!

Ingredients

  • 2 large ripe bananas, mashed (about 3/4 cup)
  • 1/2 cup almond butter (or substitute with peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups rolled oats (use gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the mashed bananas, almond butter, maple syrup, and vanilla extract until smooth.
  3. In another bowl, combine the oats, salt, cinnamon (if using), chocolate chips, and walnuts.
  4. Pour the wet ingredients into the dry mixture and stir until well-combined.
  5. Use a cookie scoop to portion the dough onto the baking sheet. Flatten each cookie slightly with your hands.
  6. Bake for 12-15 minutes, or until the edges are golden brown.

Notes

  • Storage: Store cookies in an airtight container at room temperature for up to 2 days, or refrigerate for 5-6 days.
  • Ripe Bananas: The riper the bananas, the sweeter the cookies. Bananas with brown spots are ideal for this recipe.
  • Oats: Use rolled oats for the best texture. Quick oats tend to be softer and can blend into the cookies.
  • Shape: Press each cookie down to flatten slightly, as they won’t spread on their own.
