Ingredients

Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted

Filling:

  • 2 cups cream cheese, softened
  • 1 cup heavy whipping cream
  • ¾ cup honey
  • 2 tablespoons dried culinary lavender
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

1. Prepare the crust:
Mix graham cracker crumbs with melted butter until evenly combined. Press firmly into the bottom of a springform pan. Chill in the fridge while preparing the filling.

2. Infuse the cream:
In a small saucepan, heat the heavy cream with the dried lavender over low heat for 5 minutes. Remove from heat and let steep for 15–20 minutes. Strain to remove the lavender buds.

3. Make the filling:
Beat the softened cream cheese until smooth. Add honey, vanilla, and lemon juice, mixing until creamy and well combined.

4. Combine:
Slowly fold the lavender-infused cream into the cream cheese mixture. Mix gently until fully incorporated—avoid overmixing.

5. Assemble the cheesecake:
Pour the filling over the chilled crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or until fully set.

6. Serve:
Carefully remove the cheesecake from the springform pan. Slice and serve chilled, garnished with extra lavender or a drizzle of honey if desired.
