Mini Lemon Drop Cakes

For the Mini Cakes:

  • 1 cup all-purpose flour
  • 1 cup sugar
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup butter
  • ½ cup water
  • ¼ cup sour cream
  • 1 egg
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice

For the Glaze:

  • 1 ½ cup powdered sugar
  • 2 tbsp lemon juice
  • 2 tbsp milk
  • 1 tsp lemon zest
  • 1 tbsp butter, melted

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C).
  2. Mix Dry Ingredients: In a bowl, combine flour, sugar, salt, and baking soda.
  3. Make the Buttery Mixture: In a small saucepan, melt the butter, add water, stir, and bring to a boil.
  4. Combine: Pour the hot buttery mixture into the dry ingredients and mix until just combined. Then add sour cream, egg, lemon zest, and lemon juice. Beat until smooth.
  5. Bake: Grease a mini muffin tin with cooking spray. Fill each cup with batter and bake for 10-15 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a cooling rack.
  6. Prepare the Glaze: While the cakes cool, mix powdered sugar, lemon juice, lemon zest, milk, and melted butter. Heat for 10-15 seconds in the microwave if needed.
  7. Glaze the Cakes: Dip the bottom of each mini cake into the glaze and return to the rack. Allow the glaze to harden before serving.
