Luscious Chocolate Pecan Loaf 🍫🥮

Ingredients:

  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1/2 cup cocoa powder
  • 1/2 cup dark chocolate chips
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans

For the Ganache:

  • 1/2 cup dark chocolate, chopped
  • 1/2 cup heavy cream

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper for easy removal.
  2. In a large bowl, whisk together the sugar, flour, cocoa powder, baking soda, and salt until well blended.
  3. In a separate bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth and combined.
  4. Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix.
  5. Fold in the chopped pecans and dark chocolate chips, ensuring they’re evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 55-60 minutes. To check doneness, insert a toothpick into the center; it should come out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. For the ganache, heat the heavy cream in a saucepan until it simmers. Remove from heat and pour over the chopped dark chocolate. Let sit for 5 minutes, then stir until smooth.
  10. Drizzle the ganache over the cooled loaf, let it set, and enjoy!
