Low Carb Caesar Salad with Chicken

This low-carb Chicken Caesar Salad offers all the classic Caesar flavors while being keto-friendly! It features crisp Romaine lettuce, tender chicken, crunchy parmesan crisps, and a rich, homemade Keto Caesar dressing.

Ingredients:

  • Low Carb Chicken Caesar Salad
    • 1 lb Chicken Breasts
    • Salt and pepper, to taste
    • 6 cups Romaine Lettuce
    • 1/4 cup parmesan cheese
    • 1/2 cup parmesan crisps
  • Low Carb Caesar Dressing
    • 3/4 cup mayonnaise
    • 1/2 cup grated parmesan cheese
    • 4 Anchovy filets (1 oz) in olive oil
    • 4 cloves garlic, minced
    • 2 tbsp lemon juice
    • 1 tsp Dijon mustard
    • 1/4 tsp black pepper
    • Pinch of salt

Instructions:

Make the Low Carb Caesar Dressing:

  • Combine all dressing ingredients in a blender and pulse until smooth. Transfer to a container and refrigerate until ready to use.

Make the Chicken Caesar Salad:

  1. Prepare the dressing as outlined.
  2. Heat a medium pan over medium heat. Slice the chicken breasts in half to create two thinner pieces.
  3. Pat the chicken dry and season with salt and pepper. Cook until golden brown and internal temperature reaches 165°F.
  4. In a large bowl, combine Romaine lettuce, parmesan, and crisps. Toss with the prepared dressing until the lettuce is evenly coated.
  5. Divide the salad into 4 bowls and top with sliced chicken. Enjoy!
