Why These Keto Chips Are a Game Changer

Before going keto, tortilla chips were always my number one savory snack. Sure, I liked pretzels and potato chips, but tortilla chips? They were unbeatable.

Once corn-based chips were off the menu, I knew I had to recreate that same crunch—without using tortillas, pita bread, or any high-carb shortcuts. And honestly? I’m glad I did.

Unlike many “low-carb” chip recipes that rely on non-keto ingredients, these homemade keto tortilla chips are:

  • Truly low carb
  • Extra crispy and crunchy
  • Strong enough for dips
  • Shockingly close to Doritos in texture

They’re perfect for guacamole, salsa, queso, or piled high as keto nachos.

Are Tortilla Chips Keto?

Traditional tortilla chips are made from corn or wheat flour—both are high in carbohydrates and not keto-friendly.

Even some store-bought “low-carb” options still contain questionable ingredients or fillers. That’s why making them at home is the best option.

These keto tortilla chips skip the starches entirely and rely on a simple combination of almond flour and mozzarella cheese to create a crunchy, golden chip that actually satisfies.

Ingredients You’ll Need

Main Ingredients

  • Blanched almond flour – This is essential for a light, crispy texture. Almond meal will make the chips dense and crumbly.
  • Shredded mozzarella cheese – Use full-fat mozzarella for best melting and structure.

Optional Seasonings

  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Chili powder

You can easily customize the flavor depending on how you plan to serve them.

How to Make Keto Tortilla Chips

Step 1: Prepare the Dough

Add the almond flour (and any seasonings) to a large bowl. Microwave the mozzarella cheese for 1–2 minutes until fully melted.

Pour the melted cheese into the almond flour and mix thoroughly until a thick, cohesive dough forms.

Step 2: Roll It Thin

Place the dough between two sheets of parchment paper. Using a rolling pin, roll it out very thin—about 1/6 inch. The thinner the dough, the crispier the chips.

Step 3: Cut & Bake

Cut the dough into small triangles using a knife or pizza cutter. Transfer the pieces to a lined baking sheet.

Bake at 180°C / 350°F for 12–15 minutes, until the edges turn golden brown.

Let the chips cool completely on the baking sheet—this is when they firm up and become crunchy.

Air Fryer Instructions

Yes, these keto chips work beautifully in the air fryer.

  • Prepare and cut the dough as usual
  • Arrange chips in a single layer
  • Air fry at 180°C / 350°F for 8–10 minutes
  • Cool completely before serving

You may need to cook in batches.

Troubleshooting Tips

Why Are My Chips Soft?

  • They weren’t baked long enough
  • The dough wasn’t rolled thin enough

These chips need time to crisp up—don’t remove them too early.

Can I Use Vegan Cheese?

Vegan cheese doesn’t melt the same way as mozzarella and won’t provide the same structure or crunch. For best results, stick with mozzarella.

Flavor Variations

  • Nacho Cheese: Replace ¼ cup mozzarella with pepper jack or Colby
  • Cool Ranch: Add garlic powder, onion powder, and extra salt
  • Spicy Nachos: Add cayenne pepper and smoked paprika
  • Lime & Black Pepper: Add a splash of lime juice and cracked pepper
  • Sweet Cinnamon Chips: Add cinnamon and keto sweetener to the dough, then dust again after baking

How to Store Keto Tortilla Chips

Store cooled chips in a sealed container at room temperature.

  • Shelf life: Up to 1 week
  • Do not refrigerate or freeze (they’ll lose their crunch)
