A Sweet Story

I remember visiting my friend Mary one afternoon as she was preparing her famous peach dessert. As she pulled the warm dish from the oven, her husband walked in, eyeing it with skepticism. “What kind of mess is this? Is there anything more appetizing?” he asked, but once he tasted it, his doubts vanished!

Ingredients

For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 4 tbsp unsalted butter, chilled and cut into small pieces

For the Filling:

  • 7 peaches, skinned, pitted, and cut into 1/2-inch slices
  • 1/4 cup apple juice
  • 2 tbsp sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp all-purpose flour
  • 1/2 tbsp ground cinnamon
  • Non-stick cooking spray or butter (for greasing)

Instructions

  1. Prepare the Peaches:
    Peel and slice the peaches into 1/2-inch pieces. In a large bowl, combine the peach slices with apple juice, lemon juice, flour, sugar, and cinnamon. Gently mix to combine.
  2. Make the Crumble Topping:
    In another bowl, combine the chilled butter, all-purpose flour, brown sugar, white sugar, cinnamon, and kosher salt. Use a fork or your fingers to mash and mix until the mixture resembles coarse crumbs.
  3. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick cooking spray or butter.
  4. Assemble the Crisp:
    Spread the peach mixture evenly in the greased baking dish. Sprinkle the crumble topping generously over the peaches.
  5. Bake:
    Place the dish in the preheated oven and bake for about 40 minutes, or until the topping is golden brown and the peaches are bubbly.
  6. Serve:
    Allow the crisp to cool slightly before serving. It can be enjoyed warm or cold, making it a versatile dessert!
