Healthy Chicken Breast with Zucchini and Squash

Ingredients

For the Chicken:

  • 1.25 lb boneless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp lemon zest
  • Kosher salt and freshly ground black pepper

For the Vegetables:

  • 10 oz zucchini, cut into half-moons or 1/2-inch pieces
  • 10 oz yellow squash, cut similarly
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Kosher salt and freshly ground black pepper

For the Finish:

  • 2 tbsp fresh lemon juice
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, finely chopped
  • Extra lemon zest (optional, for garnish)

Instructions

1. Prepare and Season the Chicken
Pat chicken dry with paper towels. In a small bowl, mix salt, pepper, Italian seasoning, garlic powder, onion powder, and lemon zest. Season the chicken evenly on all sides.

2. Cook the Chicken
Heat 1 tbsp olive oil and 1 tbsp butter in a 12-inch skillet over medium-high heat. Add the chicken and cook for 3 minutes per side, or until the internal temperature reaches 165°F. Transfer to a plate and tent with foil.

3. Cook the Vegetables
In the same skillet, heat the remaining olive oil and butter. Add zucchini and squash, season with salt, Italian seasoning, and garlic powder. Cook for about 4 minutes, tossing occasionally, until tender but still vibrant.

4. Combine and Finish
Return the chicken to the skillet with the vegetables. Drizzle with lemon juice, sprinkle with Parmesan and parsley, and toss gently to combine. Garnish with extra lemon zest if desired. Serve warm, or over cooked orzo for a more filling meal.
