  • 9 large eggs
  • 1 cup whole milk
  • ½ tsp salt
  • ½ tsp dry mustard powder (optional but adds great flavor)
  • ¼ tsp garlic powder

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Arrange the hash brown patties in a single layer in the dish.
  3. Sprinkle the cheddar, Monterey Jack, ham, and scallions evenly over the hash browns.
  4. In a mixing bowl, whisk together the eggs, milk, salt, mustard powder, and garlic powder.
  5. Pour the egg mixture evenly over the layered ingredients in the dish.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil and bake for another 20 minutes, or until golden around the edges and the center is set (a knife inserted should come out clean).
