Ground Beef and Broccoli

This Ground Beef and Broccoli recipe is a quick and easy 30-minute meal that’s full of flavor! Tender ground beef, crisp veggies, and a simple savory sauce come together perfectly, making it a family favorite. Serve it over rice for a satisfying, wholesome dinner!

Ingredients:

  • 1 Tablespoon peanut oil (or substitute with vegetable/olive oil)
  • 3 cups broccoli florets, washed and dried
  • 1 lb. ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • Salt and white pepper, to taste

Sauce:

  • 2 Tablespoons cornstarch + 2 tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 1-2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil

For Serving:

  • 3 cups cooked rice

Instructions:

Prep Work:

  1. In a covered container, combine cornstarch with 2 tablespoons water and shake well. Set aside.
  2. In a medium bowl, mix the remaining sauce ingredients. Start with 1 tablespoon of honey and adjust at the end if needed.

Cook the Broccoli:

  1. Heat oil over medium heat. Add broccoli and toss to coat. Cook for 4-5 minutes until slightly softened. Remove and set aside.

Cook the Beef:

  1. Season the ground beef with salt and white pepper if desired.
  2. Brown the beef and diced onions over medium-high heat, crumbling as it cooks until fully cooked through. Drain grease.
  3. Add sliced bell peppers and cook for 1 minute.

Add the Sauce:

  1. Pour in the sauce mixture and bring to a boil. Let it simmer for 2-3 minutes.
  2. Shake the cornstarch mixture, then slowly stir it into the sauce. Let it simmer until the sauce thickens.

Combine and Serve:

  1. Reduce heat to low and stir the broccoli back into the pan.
  2. Heat through, garnish with green onions, and serve over rice for a complete meal!
