🛒 Ingredients (Serves 4)

Main Ingredients

  • 1½ lbs baby potatoes, washed and halved
  • 1½ tbsp olive oil (divided)
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • 1½ lbs jumbo shrimp, peeled and deveined
  • ½ tsp dried basil
  • 1 tbsp fresh parsley, chopped

Garlic Butter Sauce

  • ¼ cup butter, melted
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • ¼ tsp red pepper flakes
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Preheat oven to 450°F (230°C).
  2. Toss potatoes with 1 tablespoon olive oil, oregano, salt, and pepper.
    Spread on a sheet pan and roast for 20 minutes.
  3. Toss asparagus with remaining olive oil, salt, and pepper.
    Remove pan from oven, flip potatoes, and add asparagus.
    Roast for 10 minutes more.
  4. In a small bowl, mix all garlic butter ingredients.
  5. Toss shrimp with half of the garlic butter sauce.
  6. Add shrimp to the sheet pan and roast for 6–8 minutes, until shrimp are pink and cooked through.
  7. Remove from oven and sprinkle with basil and parsley.
  8. Drizzle with remaining garlic butter and serve immediately.
