Garlic Butter Ground Turkey with Cauliflower – A Healthy Comfort Bowl

Ingredients

  • 1 lb (450g) ground turkey (or ground chicken)
  • 1/2 head cauliflower, cut into florets
  • 2 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 3 tablespoons butter
  • 2 tablespoons minced garlic
  • 1 tablespoon onion powder
  • 1/4 cup (60ml) low-sodium soy sauce (or coconut aminos for paleo)
  • 2 tablespoons hot sauce (Sriracha recommended)
  • 2 teaspoons sesame oil
  • Fresh chopped cilantro or parsley
  • 1/4 cup (60ml) water
  • Red chili pepper flakes
  • Lemon slices for garnish

Instructions

  1. Cook the cauliflower: Heat 1 tablespoon of vegetable oil in a large skillet over medium-low heat. Sauté the cauliflower florets until slightly golden brown (do not burn). Deglaze the pan with lemon juice, add some fresh cilantro, salt, and pepper, and toss to coat. Transfer the cauliflower to a plate and set aside.
  2. Cook the turkey: In the same skillet (rinse if needed), melt butter with 1 tablespoon of oil. Add the ground turkey and cook, breaking it apart with a wooden spoon, until no longer pink. Stir in garlic and onion powder.
  3. Add the sauce: Mix in soy sauce, hot sauce, and water. Continue cooking, stirring regularly, for 2–3 minutes.
  4. Combine with cauliflower: Push the turkey to one side of the skillet and return the cauliflower. Reheat briefly and coat with the sauce. Drizzle with sesame oil, sprinkle with fresh cilantro, red chili flakes, and garnish with lemon slices. Serve immediately.

Tips

  • Quick cauliflower: Microwave the florets with 1/4 cup water for 4 minutes before sautéing to speed up cooking.
  • Extra sauce: Remove the cooked turkey and add more butter, garlic, and onion powder, deglaze with soy sauce and hot sauce, then serve alongside the turkey and cauliflower.
  • Seasoning: Use low-sodium soy sauce and skip extra salt—it’s already flavorful!
