Fudgy Brownies from Scratch

These homemade fudgy brownies are the ultimate treat, with crackly tops, chewy centers, and rich chocolate flavor that will easily outshine any box mix! In just a few steps, you’ll have a batch of brownies that will quickly become your favorite go-to recipe.

Ingredients

  • 200 g (7 oz) dark or semi-sweet chocolate, roughly chopped
  • 125 g (4.5 oz / ½ cup) unsalted butter, softened
  • ½ cup (120 g) caster sugar (superfine sugar)
  • ½ cup (110 g) packed brown sugar
  • 2 large eggs
  • 1 tsp (5 g) vanilla extract
  • ½ cup (50 g) unsweetened cocoa powder
  • ½ cup (75 g) plain flour (all-purpose flour)
  • ½ tsp (3 g) salt

Instructions

  1. Preheat Oven: Preheat to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a 20 cm (8 inch) square tin with baking paper, leaving an overhang for easy removal.
  2. Melt Chocolate: In a small heatproof bowl, microwave the chopped chocolate for 1 minute. Stir, then microwave for another 30 seconds. Stir until smooth. If needed, continue microwaving in 10-second bursts until fully melted. Set aside.
  3. Cream Butter and Sugars: In a large mixing bowl, whisk together the softened butter, caster sugar, and brown sugar until well combined. Add eggs one at a time, whisking after each addition until pale and creamy. Stir in vanilla extract.
  4. Combine Ingredients: Add the melted chocolate to the butter-sugar mixture and whisk until smooth. Fold in cocoa powder, flour, and salt until fully combined and the batter is thick.
  5. Bake: Pour the batter into the prepared tin and spread evenly. Bake for 30-35 minutes, or until the brownies are firm and no longer wobble when moved. Allow to cool in the tin for 30 minutes before transferring to a wire rack to cool completely.
