Frito Cowboy Cabbage Salad

If you’re craving a bold, flavor-packed twist on classic coleslaw, Frito Cowboy Cabbage delivers! This Tex-Mex-inspired salad is loaded with crunchy coleslaw mix, black beans, corn, fresh peppers, and a creamy chipotle dressing. Why It’s Called Cowboy Cabbage

The name comes from its hearty, bold ingredients and cowboy-style flavor. The coleslaw base gives it crunch, while black beans, corn, peppers, and chipotle dressing bring a Tex-Mex flair. This salad is a true crowd-pleaser and pairs well with other cowboy-inspired dishes like Cowboy Beans, Cowboy Caviar, and Cowboy Queso.

Ingredients & Tips

Coleslaw Mix: Use a fresh mix of green and purple cabbage with shredded carrots for the perfect crunch.

Beans & Corn: Rinse canned black beans to remove excess salt. Fresh corn works wonderfully for a sweeter, fresher flavor.

Peppers: Jalapeño adds mild heat, but you can adjust to taste. Red bell pepper brings sweetness and vibrant color.

Cilantro: Adds a fresh note; omit if you’re not a fan or start with a small amount.

Seasoning & Dressing: Homemade taco seasoning gives depth, and the chipotle sauce adds smoky spice. No chipotle sauce? Use smoked paprika, salsa, or hot sauce for heat.

Make-Ahead: Cowboy Cabbage can be prepared a few hours ahead. Flavors deepen as it sits. Keep it refrigerated and add Fritos just before serving for maximum crunch.

Heat Level: Mild to medium, thanks to jalapeño and chipotle dressing. Adjust by adding more peppers for extra kick or leaving them out for a milder version.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Keep Fritos separate until serving.


Ingredients

Salad:

  • 1 bag (16 oz) coleslaw mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ½ cups (247.5 g) canned corn, drained
  • 1 medium jalapeño, seeded and finely diced
  • 1 small red bell pepper, diced
  • 3 green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp taco seasoning
  • ½ tsp ground cumin
  • 1 bag (9.75 oz) Chili Cheese Fritos, reserving a handful for topping

Chipotle Dressing:

  • ½ cup (115 g) sour cream
  • ½ cup (116 g) mayonnaise
  • ¼ cup fresh lime juice (about 2 limes)
  • 2 tbsp chipotle sauce from a can of chipotles in adobo (just the sauce)

Instructions

  1. In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss until well mixed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth to make the dressing.
  3. Pour the dressing over the coleslaw mixture and gently toss to coat evenly.
  4. Stir in all but a handful of Fritos.
  5. Just before serving, top with the reserved Fritos for extra crunch. Serve immediately.

Serving Suggestion: Enjoy as a side for BBQs, taco nights, or as a fun party snack.
