Cowboy Sliders

Cowboy Sliders take classic cheeseburgers to a whole new level! These mini sandwiches are packed with savory ground beef, crispy bacon, jalapenos, melted cheese, and a rich cowboy butter glaze. Baked until golden and gooey, they’re the kind of sliders you’ll be tempted to eat with a fork just so you don’t miss a single crumb. Perfect for game days, parties, or an easy dinner!


What Makes Them “Cowboy” Sliders?

It all comes down to the hearty toppings and that irresistible cowboy butter brushed on top. The beefy filling, crispy onions, jalapenos, smoky bacon, and buttery finish make every bite bold, messy, and delicious — just like cowboy food should be!


Ingredients & Variations

Beef Filling

Ground beef is the star here, seasoned with Worcestershire sauce, seasoned salt, and hamburger seasoning for big flavor. You can swap in ground turkey or chicken if you prefer.

Toppings

Sharp cheddar, bacon, and jalapeno slices give these sliders their kick.

  • Want it spicier? Use pepper jack cheese.
  • Prefer mild? Leave out the jalapenos.

Crispy Fried Onions

We tested both onion rings and packaged crispy onions — the crispy onions win! Onion rings get soggy when baked, but you can always add them afterward for an added crunch.

The Rolls

King’s Hawaiian Rolls are perfect for these sliders thanks to their softness and slight sweetness, but any slider buns work. If you bake a lot, try making your own Hawaiian rolls!


What Is Cowboy Butter?

Cowboy butter is a seasoned butter packed with herbs and spices. In this recipe, its melted and brushed over the sliders before baking — and after, if you’re a butter lover!
For this version, leave out the lemon juice so it pairs perfectly with the savory fillings.


Make-Ahead Tips

Want to prep ahead?
Cook the seasoned beef mixture in advance and let it cool completely.
Store it in the fridge for up to 4 days or freeze for a couple of months.
When it’s time to assemble, just reheat slightly and build your sliders — perfect for easy entertaining!


How to Store Leftovers

Keep cooled sliders in an airtight container in the fridge for up to 3 days. Reheat in the microwave for quick leftovers or pop into the oven (covered) to keep the bread soft.

These Cowboy Sliders are layered with seasoned ground beef, jalapenos, bacon, cheddar cheese, and crispy fried onions — all baked in sweet Hawaiian rolls and brushed in cowboy butter for the ultimate flavor-packed bite.

Ingredients

Hamburger Mixture

  • 1 tablespoon vegetable oil
  • ½ yellow onion, diced
  • ½ teaspoon minced garlic
  • 1 pound ground beef
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon seasoned salt
  • 1 tablespoon hamburger seasoning
  • 1 medium jalapeno, seeded and sliced
  • 6 slices thick-cut bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup crispy fried onions
  • 1 package (12-count) King’s Hawaiian rolls

Topping

  • 1 recipe cowboy butter* (without lemon juice)

Instructions

  1. Prep: Preheat oven to 350°F and lightly grease a 7×11-inch baking dish.
  2. Make the Beef Filling:
    • Heat oil in a skillet over medium heat.
    • Cook onion and garlic for 1–2 minutes.
    • Add ground beef, Worcestershire sauce, seasoned salt, and hamburger seasoning.
    • Cook 8–10 minutes until browned, breaking up meat. Drain.
  3. Assemble Sliders:
    • Slice rolls horizontally and place the bottoms into dish.
    • Drizzle about 2 tablespoons cowboy butter over the bread.
    • Add beef mixture, then top with jalapenos, bacon, cheese, and crispy fried onions.
    • Place top buns over fillings and brush with melted cowboy butter.
  4. Bake:
    • Cover with foil and bake 15 minutes.
    • Remove foil and bake another 3–5 minutes until golden.
  5. Serve: Brush with more cowboy butter or use as a dip, slice, and enjoy!
