Ingredients
- Chicken:
- 1½ pounds boneless, skinless chicken thighs or breasts
- 1 cup flour
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- Salt and pepper to taste
- Teriyaki Sauce:
- ½ cup low sodium teriyaki sauce (Veri Veri Teriyaki Low Sodium is a great choice)
- ¼ cup low sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 garlic cloves, minced
- 2 tablespoons cornstarch
Instructions
- In a small bowl, whisk together the teriyaki sauce, soy sauce, sesame oil, honey, and minced garlic. Adjust to taste, adding more honey or soy sauce if desired. Mix in the cornstarch until dissolved and set aside.
- Cut the chicken into bite-sized pieces.
- In a plastic bag or bowl, combine the flour, garlic powder, paprika, salt, and pepper. Dredge the chicken pieces, ensuring they are well coated on all sides.
- Heat a skillet over medium-high heat and add a drizzle of light olive oil. Add the coated chicken and cook until nearly done.
- Pour the prepared teriyaki sauce over the chicken and toss to coat. Cook for an additional 2–3 minutes until the chicken is fully cooked.
- Transfer the teriyaki chicken to a plate. You can use Costco’s fried rice or make your own, then mix the cooked teriyaki chicken into the rice before serving. Enjoy your flavorful meal!
