Easy Taco Soup with Ranch

Ingredients:

  • 1 lb ground beef (93% lean)
  • ½ onion, chopped
  • 1 garlic clove, minced
  • 1 green bell pepper, chopped
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 ½ cups beef broth
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (10 oz) Rotel diced tomatoes with green chiles
  • 1 packet (1 oz) ranch dressing mix
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon coriander

Instructions:

  1. In a 4-quart Dutch oven or large pot, cook the ground beef with the chopped onion, minced garlic, and chopped green bell pepper until the beef is browned and the vegetables are soft.
  2. Stir in the crushed tomatoes, Rotel tomatoes with green chiles, pinto beans, black beans, and drained corn.
  3. Add the beef broth, taco seasoning, ranch dressing mix, cumin, and coriander. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  4. Serve hot, with your favorite toppings like shredded cheese, sour cream, or tortilla chips.
