Easy Macaroni Salad Recipe

This Easy Macaroni Salad is a classic, creamy side dish perfect for summer BBQs, potlucks, and gatherings! Packed with fresh veggies, cubes of cheddar cheese, and a flavorful dressing, it’s easy to make and always a crowd-pleaser.

Ingredients:

  • 1 lb elbow macaroni
  • 6 oz cheddar cheese, cubed
  • 1/2 red onion, finely chopped
  • 4 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas, thawed
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh dill, chopped
  • 2 tbsp sugar
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tsp pepper

Instructions:

  1. Cook the macaroni until al dente. Drain and rinse with cold water to prevent sticking.
  2. In a large bowl, combine the pasta, cheddar cheese, onion, celery, bell pepper, and peas.
  3. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, dill, sugar, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to coat evenly. Cover and chill for at least 1 hour before serving.
