Easy Flourless Oatmeal Carrot Cake Recipe

This easy flourless carrot cake is a healthier twist on a classic! Naturally sweetened, refined sugar-free, and made with simple ingredients, it’s a perfect treat to enjoy with your morning coffee or tea.

Ingredients

  • 2 eggs
  • 1/2 cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1/4 cup butter, at room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Set your oven to 350°F (180°C).
  2. Prepare the Batter: In a mixing bowl, combine all ingredients except the shredded carrots. Blend with an immersion blender until smooth. Alternatively, you can use a regular blender.
  3. Add Carrots: Fold in the shredded carrots until evenly combined.
  4. Bake: Line a small baking pan (approximately 7×7 inches or 18 cm) with parchment paper. Pour the batter into the pan and spread evenly. Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Serve: Let the cake cool before slicing. Enjoy!
