Deviled Strawberries

Ingredients:

  • 18-24 large strawberries
  • 1 cup heavy whipping cream
  • 1 (8 oz) package cream cheese, softened
  • ⅓ cup sour cream
  • ⅔ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)
  • ½ cup graham cracker crumbs

Instructions:

  1. Prep the strawberries: Slice off the stems and cut each strawberry in half. Trim a small sliver off the back of each half so they sit upright. Using a small melon baller, carefully hollow out a small indent in the center of each strawberry to hold the filling.
  2. Whip the cream: In a medium mixing bowl, beat the heavy whipping cream until stiff peaks form (about 5 minutes).
  3. Make the filling: In a separate bowl, mix together the softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice (optional) until smooth using an electric mixer.
  4. Combine the mixtures: Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Pipe the filling: Transfer the cream cheese mixture to a piping bag fitted with a star tip and pipe the filling into each prepared strawberry.
  6. Finish with graham cracker crumbs: Sprinkle the tops with graham cracker crumbs for a cheesecake-like finish.
  7. Serve and enjoy: These strawberries are best served chilled for a refreshing, crowd-pleasing treat!

Notes:

  • For a low-carb option, substitute the sugar with a low-carb sweetener and skip the graham cracker crumbs.
  • Strawberry size will affect how many you need. Medium strawberries from a large Costco pack may leave you with extra filling (which you can enjoy by itself!).
  • The cream cheese mixture can be made the day before. Store the strawberries in an airtight container with a paper towel to keep them fresh and avoid any soggy texture.
