Why You’ll Love This Recipe

  • Easy Prep: Minimal hands-on time – the slow cooker does all the work.
  • Family-Friendly: Tender potatoes, rich cheese sauce, and savory ham make everyone happy.
  • Perfect for Holidays: Makes a large batch, ideal for serving a crowd.
  • Versatile: Pairs beautifully with ham, turkey, roast beef, or even pork chops.

Ingredients You’ll Need

  • 6 medium russet potatoes, peeled and thinly sliced
  • 2 cups pre-cooked diced ham
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 10.5 oz cream of mushroom soup
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika
  • Chopped fresh parsley, for garnish (optional)

How to Make Crock Pot Scalloped Potatoes and Ham

  1. Grease the inside of a 6-quart slow cooker with cooking spray or butter.
  2. In a large bowl, whisk together cream of mushroom soup, milk, sour cream, thyme, salt, pepper, and paprika.
  3. Layer ⅓ of the sliced potatoes in the bottom of the slow cooker.
  4. Top with ⅓ of the diced ham, ⅓ of the chopped onion, and ⅓ of the minced garlic.
  5. Pour ⅓ of the sauce mixture over the layers. Repeat the layering process two more times with the remaining ingredients.
  6. Sprinkle shredded cheddar cheese evenly on top.
  7. Cover and cook on LOW for 7-8 hours, until the potatoes are tender.
  8. Let stand for 15 minutes before serving to allow the sauce to thicken slightly.
  9. Garnish with fresh parsley, if desired.

Expert Tips

  • Cooking Time: Cook on HIGH for 4-5 hours if short on time.
  • Sauce Consistency: Reduce milk to ¾ cup for a thicker sauce, or increase to 1¼ cups for a thinner sauce.
  • Even Cooking: Slice potatoes evenly to ensure consistent tenderness.
  • Cheese Tip: Use freshly shredded cheese for a creamier sauce and better flavor.
