Crispy Cheddar Chicken

Ingredients

For the Crispy Cheddar Chicken:

  • 4 large chicken breasts
  • 2 sleeves Ritz crackers, crushed into crumbs
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup milk
  • 3 cups grated cheddar cheese
  • 1 teaspoon dried parsley

For the Creamy Sauce:

  • 1 can (10 oz) cream of chicken soup
  • 2 tablespoons sour cream
  • 2 tablespoons butter

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking pan with non-stick cooking spray.
  2. Prepare the Chicken: Cut each chicken breast into 3 equal pieces. Set aside.
  3. Set Up Breading Stations: In three shallow bowls, prepare your breading stations:
    • Bowl 1: Pour in the milk.
    • Bowl 2: Add the shredded cheddar cheese.
    • Bowl 3: Combine the crushed Ritz crackers, salt, and black pepper.
  4. Bread the Chicken: Dip each piece of chicken into the milk, then coat it with shredded cheddar cheese. Finally, roll it in the crushed Ritz crackers until evenly coated. Repeat with the remaining chicken pieces.
  5. Bake the Chicken: Place the breaded chicken breasts in the prepared baking pan. Sprinkle with dried parsley. Cover the pan with aluminum foil and bake in the preheated oven for 30-35 minutes. After that, remove the foil and bake for an additional 10 minutes, or until the chicken is golden brown and crispy.
  6. Prepare the Creamy Sauce: While the chicken is baking, make the sauce. In a saucepan over medium-high heat, whisk together the cream of chicken soup, sour cream, and butter until well combined and heated through.
  7. Serve: Remove the baking pan from the oven, drizzle the hot sauce over the chicken, and enjoy!
