Creamed Chipped Beef on Toast (SOS)

Creamed Chipped Beef on Toast (SOS) is classic comfort food at its finest. This simple, savory dish features thinly sliced dried beef simmered in a creamy white sauce and served over thick, buttery toast. In just about 20 minutes, you can bring this nostalgic favorite from the Midwest and military kitchens straight to your table.

Also called SOS (“Shit on a Shingle”), this dish has been a go-to for generations. The salty, flavorful dried beef combines beautifully with a rich, creamy gravy for a comforting, satisfying meal. Serve it for breakfast, brunch, or even a quick weeknight dinner, and you’ll understand why it’s stood the test of time.

Tips for the Best SOS

  • Rinse the beef: Dried beef is naturally very salty. Rinse it well before cooking to control the saltiness.
  • Choose sturdy bread: Thick slices like Texas toast, brioche, or country white hold up best under the creamy gravy.
  • Adjust the gravy: If it gets too thick, whisk in a splash of milk to loosen it to your preferred consistency.

Ingredients

  • 8 oz jar dried beef slices (Buddig, Hormel, or Armour)
  • ¼ cup unsalted butter
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Pinch of crushed red pepper flakes
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 8 slices thick-cut bread (Texas toast, brioche, or white sandwich bread)
  • Freshly cracked black pepper, to taste

Instructions

  1. Rinse the dried beef slices thoroughly to remove excess salt, pat dry, and cut into bite-sized strips.
  2. In a large skillet over medium heat, melt the butter. Add the beef and sauté 1–2 minutes until slightly crisp.
  3. Stir in garlic powder, oregano, and red pepper flakes. Sprinkle in the flour and stir until fully incorporated, forming a roux.
  4. Slowly pour in the milk while whisking constantly. Bring to a boil, then reduce heat and simmer for 2 minutes until thickened. Add more milk if necessary.
  5. Meanwhile, toast the bread slices. Pour the creamed beef mixture over the toast and finish with fresh-cracked black pepper. Serve immediately.

Tips & Variations

  • No dried beef? Substitute thinly sliced roast beef, pastrami, corned beef, or even leftover cooked steak.
  • Add veggies: Toss in ½ cup thawed frozen peas for a pop of color and sweetness.

Storage
Leftovers can be refrigerated in an airtight container for 2–3 days. Reheat gently on the stove or in the microwave, adding a splash of milk if needed.
