Boursin Chicken – Creamy, Garlic Herb Mushroom Chicken

This Boursin Chicken is a quick and elegant weeknight dinner featuring tender chicken cutlets in a creamy mushroom and garlic herb Boursin cheese white wine sauce. It’s simple enough for a weekday meal but tastes like something from a restaurant!

Ingredients (Serves 4)

  • 2 boneless chicken breasts (about 1½ pounds)
  • 1 tsp coarse salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • ¼ cup olive oil, divided
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • ¼ cup white wine (or extra chicken broth)
  • ¾ cup low-sodium chicken broth
  • 5.2 oz Boursin garlic & herb cheese, cut into 4 pieces
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prep Chicken: Slice chicken breasts in half to make thin cutlets. Season both sides with salt, pepper, and garlic powder.
  2. Cook Chicken: Heat half the olive oil in a large nonstick skillet over medium heat. Cook chicken 2–3 minutes per side until golden. Transfer to a plate and keep warm.
  3. Cook Mushrooms & Garlic: Add remaining oil to the skillet. Sauté mushrooms until golden, about 3–5 minutes. Add garlic and cook 20 seconds until fragrant.
  4. Make Sauce: Deglaze the pan with white wine. Stir in chicken broth and Boursin cheese until smooth. Simmer 3 minutes until slightly thickened.
  5. Combine & Serve: Return chicken to the pan and heat through, about 2 minutes, or until chicken reaches 165°F. Spoon sauce over the chicken and garnish with parsley. Serve with pasta, rice, or roasted vegetables.

  • No wine? Use extra chicken broth for a flavorful, alcohol-free sauce.
  • Thicker sauce? Simmer longer or whisk in 2 tsp flour.
  • Thinner sauce? Add a splash of chicken broth to reach desired consistency.
  • Cheese swap: Cream cheese or goat cheese works in a pinch, though Boursin delivers the signature flavor.
